Mint Cheesecake with Chocolate Crust

Ingredients:

  • 1 1/2 cups crushed chocolate cookies
  • 1/4 cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 cup sour cream
  • Green food coloring (optional)

Directions:

  1. Preheat oven to 325°F (163°C).
  2. Combine crushed cookies and melted butter. Press onto the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in chopped mint leaves and a few drops of green food coloring (if desired) for a minty hue.
  6. Fold in sour cream.
  7. Pour the mixture over the crust in the pan.
  8. Bake for 55-60 minutes or until the center is almost set.
  9. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
  10. Refrigerate overnight before serving.
