Mint Cheesecake with Chocolate Crust
Ingredients:
- 1 1/2 cups crushed chocolate cookies
- 1/4 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1/4 cup fresh mint leaves, finely chopped
- 1 cup sour cream
- Green food coloring (optional)
Directions:
- Preheat oven to 325°F (163°C).
- Combine crushed cookies and melted butter. Press onto the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in chopped mint leaves and a few drops of green food coloring (if desired) for a minty hue.
- Fold in sour cream.
- Pour the mixture over the crust in the pan.
- Bake for 55-60 minutes or until the center is almost set.
- Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
- Refrigerate overnight before serving.
