Pork Chops with Scalloped Potatoes
Ingredients:
- 6 pork chops
- 4 sweet potatoes, peeled and finely chopped
- 1 onion, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 can chicken broth (14 oz)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
Directions:
- Preheat the oven to 350 degrees F.
- Grease a 9″ x 13″ baking dish.
- Arrange the chopped sweet potatoes and sliced onions in the bottom of the baking dish and season with salt and pepper.
- Brown the pork chops and season them. Place them over the potato and onion layer in the baking dish.
- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk until combined. Gradually add the chicken broth, stirring constantly until the mixture comes to a boil and thickens.
- Add salt, pepper, garlic powder, onion powder, and paprika to the sauce, stirring to combine.
- Pour the sauce over the pork chops in the baking dish.
- Cover the dish with foil and bake for 45 minutes.
