Pork Chops with Scalloped Potatoes

Ingredients:

  • 6 pork chops
  • 4 sweet potatoes, peeled and finely chopped
  • 1 onion, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 can chicken broth (14 oz)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9″ x 13″ baking dish.
  3. Arrange the chopped sweet potatoes and sliced onions in the bottom of the baking dish and season with salt and pepper.
  4. Brown the pork chops and season them. Place them over the potato and onion layer in the baking dish.
  5. In a medium saucepan, melt the butter over medium heat. Add the flour and whisk until combined. Gradually add the chicken broth, stirring constantly until the mixture comes to a boil and thickens.
  6. Add salt, pepper, garlic powder, onion powder, and paprika to the sauce, stirring to combine.
  7. Pour the sauce over the pork chops in the baking dish.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Serve and enjoy!
