Ingredients:

- 2 pork tenderloins (approximately 1.5 pounds each)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
For the Orange Sauce:
- 1 cup orange juice (preferably freshly squeezed)
- Zest of one orange
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon cornstarch (optional, for thickening)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Season the Pork: Season the pork tenderloins with salt and pepper. Sprinkle thyme evenly over the tenderloins.
- Sear the Pork: In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork tenderloins on all sides until browned.
- Add Garlic: Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Roast in the Oven: Transfer the skillet to the preheated oven and roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C) for medium doneness. Adjust the time based on your desired doneness.
- Make the Orange Sauce: While the pork is roasting, prepare the orange sauce. In a saucepan, combine orange juice, orange zest, honey, soy sauce, and Dijon mustard. Bring the mixture to a simmer.
- Thicken the Sauce (Optional): If you prefer a thicker sauce, you can mix cornstarch with a little water to create a slurry and stir it into the simmering sauce. Continue to simmer until the sauce thickens.
- Rest the Pork: Once the pork is done, remove it from the oven and let it rest for a few minutes before slicing.
- Slice and Serve: Slice the pork tenderloins into medallions and serve with the orange sauce drizzled over the top.
