Ritz Cracker Salted Caramel Ice Cream Cake

Ingredients:

  • 2 packets of Ritz crackers
  • 1/2 cup (113 grams) of melted butter
  • 1.5 liters of vanilla or caramel flavored ice cream
  • 1 cup (240 ml) of salted caramel sauce

Instructions:

  1. Crush the Ritz crackers into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.
  2. In a bowl, mix the crushed Ritz crackers with the melted butter until well combined.
  3. Press the cracker mixture evenly into the bottom of a 9-inch springform pan to form the crust.
  4. Place the crust in the freezer for about 15 minutes to firm up.
  5. Once the crust is firm, spread half of the ice cream evenly over the crust.
  6. Drizzle half of the salted caramel sauce over the ice cream layer.
  7. Repeat with the remaining ice cream and salted caramel sauce, creating layers.
  8. Smooth the top with a spatula and return the cake to the freezer for at least 4 hours, or until completely frozen.
  9. Before serving, let the cake sit at room temperature for a few minutes to soften slightly for easier slicing.
