Ingredients:

For the Dough:

  • 2 1/2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cut into cubes
  • 1 teaspoon salt
  • 1/2 cup cold water

For the Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450g) locally sourced ground meat (beef, chicken, turkey, or a mixture)
  • 1 teaspoon locally available dried thyme
  • 1 teaspoon locally available dried rosemary
  • Salt and black pepper to taste
  • 1 cup mixed vegetables (peas, carrots, corn), locally sourced and in season
  • 1/2 cup locally made beef or chicken broth
  • 2 tablespoons all-purpose flour

Egg Wash:

  • 1 egg, beaten

Instructions:

1. Prepare the Dough:

— In a large bowl, combine the flour and salt. Add the cold, cubed butter. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
— Gradually add cold water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Make the Filling:

— In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until softened. Add minced garlic and cook for an additional 1–2 minutes.
— Add the locally sourced ground meat and cook until browned. Season with locally available dried thyme, dried rosemary, salt, and black pepper.
— Stir in the locally sourced and in-season mixed vegetables and cook until they begin to soften.
— Sprinkle flour over the meat and vegetables, stirring to combine. Pour in the locally made broth, and simmer until the mixture thickens. Remove from heat and let the filling cool.

3. Preheat Oven:

— Preheat your oven to 375°F (190°C).

4. Roll Out Dough:

— On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cutter, cut out circles for your hand pies.

5. Fill and Seal:

— Spoon a portion of the cooled filling onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape. Press the edges together to seal.

6. Brush with Egg Wash:

— Place the filled hand pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg to give them a golden finish.

7. Bake:

— Bake in the preheated oven for 20–25 minutes or until the hand pies are golden brown.

8. Serve:

— Allow the savory hand pies to cool slightly before serving. Enjoy them warm!
