Slow Cooker Sausage and White Bean Soup

Ingredients:

  • 1 pound dried white northern beans
  • 1 pound sausage (such as smoked sausage or kielbasa), sliced into bite-sized pieces
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Rinse the dried white beans and soak them overnight in water. Alternatively, you can use the quick soak method by boiling them for 2 minutes, then letting them sit for an hour off the heat before draining.
  2. In a skillet over medium heat, brown the sausage pieces until they are cooked through. Remove excess grease if needed.
  3. In a slow cooker, combine the soaked white beans, browned sausage, chopped onion, carrots, celery, minced garlic, tomato paste, chicken or vegetable broth, bay leaf, dried thyme, and dried rosemary. Season with salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the beans are tender.
  5. Once cooked, remove the bay leaf and adjust seasoning if necessary.
  6. Serve hot, garnished with freshly chopped parsley.
