 Smothered Pork Chops


Ingredients:


- 1 cup all-purpose flour

- 2 tablespoons onion powder

- 2 tablespoons garlic powder

- 1 teaspoon red pepper flakes

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 4 thin pork chops

- 2 tablespoons bacon fat

- 2 tablespoons olive oil

- 2 cups buttermilk

- Chopped fresh parsley or green onions, for garnish (optional)


Directions:


1. In a pie plate, mix together the flour, onion powder, garlic powder, red pepper flakes, salt, and black pepper.


2. Coat the pork chops in the flour mixture, shaking off any excess.


3. In a cast iron skillet over medium heat, melt the bacon fat and olive oil together.


4. Gently lay the pork chops in the skillet and fry for about 5 minutes on each side until golden brown. Remove the pork chops from the skillet.



5. In the same skillet, mix 1/2 cup of the flour mixture with the buttermilk until well combined. Pour the mixture into the skillet and stir into the hot fat. Bring the gravy to a boil, then reduce the heat to simmer until thickened, stirring often.


6. Return the pork chops to the skillet and cover them with the gravy. Simmer for an additional 5 minutes or until the pork chops are cooked through.


7. Season with additional salt and pepper if desired. Garnish with chopped parsley or green onions before serving.
