Mexican Casserole Recipe
Ingredients:
- Tortilla chips
- Cooked and seasoned ground beef or chicken
- Black beans
- Corn
- Diced tomatoes
- Chopped onions
- Chopped bell peppers
- Shredded cheese
- Enchilada sauce
- Optional toppings: sliced jalapeƱos, chopped cilantro, sour cream, avocado slices
Instructions:
- Preheat your oven to 350°F (175°C).
- In a baking dish, layer the bottom with a handful of tortilla chips.
- Top the chips with a layer of cooked ground beef or chicken.
- Add a layer of black beans, corn, diced tomatoes, chopped onions, and chopped bell peppers.
- Sprinkle a generous amount of shredded cheese over the layers.
- Pour enchilada sauce evenly over the top.
- Repeat the layers until you've used up all your ingredients, finishing with a layer of shredded cheese on top.
- Cover the dish with foil and bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
- Garnish with optional toppings like sliced jalapeƱos, chopped cilantro, sour cream, and avocado slices.
