Mexican Casserole Recipe

Ingredients:

  • Tortilla chips
  • Cooked and seasoned ground beef or chicken
  • Black beans
  • Corn
  • Diced tomatoes
  • Chopped onions
  • Chopped bell peppers
  • Shredded cheese
  • Enchilada sauce
  • Optional toppings: sliced jalapeƱos, chopped cilantro, sour cream, avocado slices

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a baking dish, layer the bottom with a handful of tortilla chips.
  3. Top the chips with a layer of cooked ground beef or chicken.
  4. Add a layer of black beans, corn, diced tomatoes, chopped onions, and chopped bell peppers.
  5. Sprinkle a generous amount of shredded cheese over the layers.
  6. Pour enchilada sauce evenly over the top.
  7. Repeat the layers until you've used up all your ingredients, finishing with a layer of shredded cheese on top.
  8. Cover the dish with foil and bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
  10. Garnish with optional toppings like sliced jalapeƱos, chopped cilantro, sour cream, and avocado slices.
