It's so delicious that I cook it almost every day





Ingredients:


-4 medium potatoes

-Salt, to taste

-Butter, for cooking

-Milk, as needed

-1 onion, finely chopped

-400g minced meat (beef, chicken, or turkey)

-Black pepper, to taste

-1 cup green peas (fresh or frozen)

-2 tomatoes, diced

-6 flour tortillas

-Tomato sauce

-Cheese, grated

-Olive oil, for frying

-Fresh parsley, chopped (for garnish)







Instructions:


1. Prepare the Potatoes:

-Peel and dice the potatoes into small cubes.

-In a pot of salted boiling water, cook the diced potatoes until tender, then drain them.

2. Cook the Minced Meat and Onion:

-In a large skillet, melt some butter over medium heat.

-Add the finely chopped onion to the skillet and fry until golden brown.

-Push the onion to one side of the skillet and add the minced meat to the other side.

-Season the minced meat with salt and black pepper, then cook until browned, breaking it apart with a spoon as it cooks.

-Once the meat is cooked, mix it with the fried onion in the skillet.

3. Prepare the Filling:

-To the skillet with the cooked meat and onion, add the cooked diced potatoes, green peas, and diced tomatoes.

-Stir everything together and let it cook for a few more minutes until heated through. -Adjust seasoning if necessary.

4. Assemble the Tortillas:

-Lay out the flour tortillas on a clean surface.

-Spread a spoonful of tomato sauce on each tortilla.

-Spoon some of the meat and potato filling onto one half of each tortilla.

-Sprinkle grated cheese over the filling.

5. Fold and Fry the Tortillas:

-Fold the tortillas in half to enclose the filling.

-In a separate skillet, heat some olive oil over medium heat.

-Carefully place each filled tortilla in the skillet and fry for about 2 minutes on each side, or until golden brown and crispy.

6. Serve:

-Once the tortillas are fried, transfer them to a serving plate.

-Garnish with freshly chopped parsley.

-Serve hot and enjoy your Potato and Minced Meat Tortillas!
