Slow Cooker Stuffed Pepper Soup


Ingredients:

1 lb ground beef

1 onion, chopped

3 bell peppers (red, green, yellow), chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) tomato sauce

3 cups beef broth

1 cup cooked rice

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

Directions:

In a skillet over medium heat, brown the ground beef with the onion until the beef is fully cooked and the onions are translucent. Drain any excess fat and transfer to a slow cooker.

Add the chopped bell peppers, garlic, diced tomatoes, tomato sauce, and beef broth to the slow cooker.

Stir in the cooked rice, salt, black pepper, and Italian seasoning.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender and the flavors are well blended.
