Banana French Toast Roll-Ups


Ingredients:


- 8 slices sandwich bread

- 2 ripe bananas

- 1/4 cup creamy peanut butter or Nutella

- 2 large eggs

- 1/4 cup milk

- 1/2 teaspoon ground cinnamon

- 1 tablespoon unsalted butter

- Maple syrup, for serving (optional)

- Powdered sugar, for garnish (optional)


Directions:


1. Trim the crusts off the sandwich bread slices using a sharp knife.

2. Use a rolling pin to flatten each bread slice until thin.

3. In a small bowl, mash the ripe bananas with a fork until smooth.

4. Spread a thin layer of creamy peanut butter or Nutella onto each flattened bread slice.

5. Spoon a small amount of mashed banana onto one end of each bread slice, then roll it up tightly.

6. In a shallow dish, whisk together the eggs, milk, and ground cinnamon until well combined.

7. In a large skillet or griddle, melt the unsalted butter over medium heat.

8. Dip each rolled-up bread slice into the egg mixture, coating it evenly on all sides.

9. Place the coated roll-ups seam-side down in the skillet or griddle.

10. Cook the roll-ups for 2-3 minutes per side, or until golden brown and crispy.

11. Remove the roll-ups from the skillet or griddle and place them on a serving plate.

12. Serve the Banana French Toast Roll-Ups warm, drizzled with maple syrup and garnished with powdered sugar if desired.
