Heavenly Cherry Pistachio Cheesecake Bars


You Will Need:


Crust:

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

1/2 cup chopped pistachios

1 1/2 cups cherry pie filling


Directions:


Prepare the Crust: Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into the bottom of a lined 9x13-inch baking pan. Chill while preparing the filling.

Make the Filling: Beat cream cheese with sugar until smooth. Incorporate vanilla extract. Add eggs one at a time, then stir in sour cream.

Assemble: Spread the filling over the crust. Dollop cherry pie filling and swirl gently with a knife. Sprinkle chopped pistachios on top.

Bake: For 40-45 minutes or until set. Cool to room temperature and refrigerate for at least 2 hours before serving.
